Old Fashioned Menudo

Also known as “menudong tagalog”, this version of the Filipino classic is often served in town fiestas and other special occassions in the provinces. This is the menudo that your nanay, tatay, lolo, or lola would have served to your family back in the old days.

Here in Cavite, each town would have their own version in terms of the supplemental ingredients used, but one thing in common in this style of menudo is the absence of tomato sauce, tomato paste, and in some versions even tomato is not added at all.

So what you get is a menudo that, while dry-looking on the outside, is actually very moist and flavorful as a result of slow-cooking the pork, the aromatics, spices and seasonings, with the fat being slowly rendered, essentially basting the whole dish in succulence and flavor as it cooks.

And because there is no tomato sauce nor tomato paste, the natural flavors of the pork become the highlight of this dish, elevated to greater heights by the aromatics and seasonings, and complemented by choice vegetables that balance, add texture, and complete the overall experience, making this menudo truly worthy of festivities.
