As many of you regular readers know, food plays a central role in both my heart and work. Beyond just nourishment, preparing and sharing meals together is how I connect to loved ones both near and far. It’s also through food that I explore different cultures and feel a sense of belonging wherever I may find myself. This holds especially true for the cuisine of my parent’s homeland, the Philippines.
Like most expats, I often crave the familiar flavors and comforts of home. Lately, it’s beentaro leaf laing front and center in my daydreams and weekly meal planning. Laing is a Filipino staple originating from the Bicol region, known for its hearty stew-like texture and subtle peppery heat from green chilies. While taro leaves may seem unusual to some, they impart an earthy umami quality unlike any green I’ve tried.
To satisfy my craving, I connected with my Tita Lourdes – my mom’s sister – who still lives in our family home in the sleepy beach town of Virac, Catanduanes. Over a nostalgic video call, she walked me through the process of sourcing ingredients and preparing her classic laing recipe passed down for generations.
The first step is procuring fresh taro leaves. Tita Lourdes recommended the local market for the best quality, thicker leaves. She also sent banana blossoms for texture and mild sweetness to offset the greens. Once washed, the leaves and blossoms are sliced into ribbons then blanched to soften before use. Sautรฉed shallots, garlic and chilies create the aromatic base of the stew. Thick coconut milk, fish sauce and a healthy amount of black pepper elevate the savory, soul-satisfying flavors.
Slowly simmered over low heat, the stew reduces into a rich, gravy-like consistency coating each leaf and blossom morsel. It’s truly comfort in a bowl! Eating laing always reminds me of lazy weekends at lola’s house, sharing homeland stories over homecooked meals. The hearty yet soulful stew transcends borders, bridging distance through taste alone.
