I quickly learned that my men are mostly carnivorous. I can entice them to eat vegetables sometimes but for every other day, I am requested to cook “regular” food, meaning prito, inihaw, or adobo. Be it pork or chicken, the guideline to pleasing their palate is always the same -dry, salty, and can be partnered with mounds of rice.
For pork, liempo (or pork belly) is the favorite cut, and, despite the guidelines, I’m always thinking of a way to serve them differently.
